Welcome back to Roots in Recipes! Today, I’m excited to share a dish that holds a special place in my family’s heart: Fårikål, Norway’s national dish. This simple yet delicious lamb and cabbage stew brings back memories of my husband’s childhood in Norway. It's a warm and hearty meal perfect for cold days, made with only a few humble ingredients. What You’ll Need:
- Lamb (3 lbs, bone-in leg or shoulder)
- Cabbage (one whole head, cut into wedges)
- Peppercorns (whole)
- Coarse salt
- Flour (to help thicken the broth)
- Water (about 2 cups)
Instructions:
- In a large Dutch oven, sprinkle a little flour on the bottom, followed by a few peppercorns.
- Layer with pieces of lamb, followed by wedges of cabbage. Sprinkle a bit of coarse salt over each layer.
- Repeat the process—more lamb, more cabbage, salt, and peppercorns—until everything is in the pot.
- Add the two cups of water, bring it all to a boil, then lower the heat and let it simmer. Cover the pot and allow it to cook for about 2-3 hours until the meat is tender and falling off the bone.
- Serve your Fårikål with boiled potatoes topped with butter and parsley.
